Cookie Butter Stuffed Dates

For days when you're craving something sweet, prep and refrigerate (or freeze!) these Cookie Butter Stuffed Dates! Made with our Grain Free Mexican Cookies, we hope you enjoy snacking on these as you get "Back to Schedule" this fall. ¡Buen Provecho!

  1. Step 1

    Heat milk and pour into a blender with the cookies of your choice. Blend cookies with warm milk until very smooth, similar to nut butter. If the butter is too loose, chill for 20 minutes.

    Place your pitted dates on a parchment lined tray and fill with the cookie butter
  3. Step 3

    Place dates in the fridge or freezer while melting the chocolate
  4. Step 4

    Pour an inch or two of water in a small saucepot over medium heat
  5. Step 5

    Place chocolate and coconut oil in a metal or glass bowl and set on top of the saucepot to create a double boiler
  6. Step 6

    Stir the chocolate until fully melted
  7. Step 7

    Drizzle melted chocolate over the dates and transfer back to the fridge or freezer to quickly set the chocolate
  8. Step 8

    Store the cookie butter stuffed dates in the refrigerator in an airtight container

    Store your dates in the freezer to keep them fresh for longer!
