Directions

Step 1
Cook corn in boiling salted water for 5 minutes and set aside to cool. -
Step 2
Transfer fuego potato chips to a plastic bag and crush until fine crumbs form. -
Step 3
Cut corn kernels off of the corn cobs and mix with melted butter and vegan mayo. Season with sea salt and chili powder. -
Step 4
In a clear glass cup, layer corn, Traditional Botana sauce, vegan feta, and repeat all once until you have two layers of each. -
Step 5
Finish the esquites with the crushed fuego potato chips. Serve warm or at room temperature.
