Esquites—or, “Corn in a Cup,'' as our family lovingly called it growing up—is a delicious and flavorful snack, side, and party treat that we love making (and eating)! We’re excited to share our quick & easy Esquites recipe with you as an invitation to:1. Try our NEW Traditional Botana Sauce &2. Enjoy a nostalgic snack that’s a staple in our Mexican-American culture and our hometown, Laredo!

  1. Step 1

    Cook corn in boiling salted water for 5 minutes and set aside to cool.
  2. Step 2

    Transfer fuego potato chips to a plastic bag and crush until fine crumbs form.
  3. Step 3

    Cut corn kernels off of the corn cobs and mix with melted butter and vegan mayo. Season with sea salt and chili powder.
  4. Step 4

    In a clear glass cup, layer corn, Traditional Botana sauce, vegan feta, and repeat all once until you have two layers of each.
  5. Step 5

    Finish the esquites with the crushed fuego potato chips. Serve warm or at room temperature.
