Esquites w/ Street Corn Maiz
Growing up, we lovingly called this snack, "Corn in a Cup" because it always came served, well...in a cup! We'd enjoy it at Mexican snack shops, birthday parties, and street fairs, too. We topped these with our Traditional Botana Sauce and paired with our NEW Mexican Street Corn Tortilla Chips, and we think the combo is pretty EARrisistibleGrowing up, we lovingly called this snack, "Corn in a Cup" because it always came served, well...in a cup! Directions

Step 1
Shuck the corn cobs, remove the silks, and slice the kernels from the cobs. -
Step 2
In a medium pot, bring water to a boil with sea salt and add all of the corn kernels. Boil corn for 4-5 minutes -
Step 3
Drain the corn and stir with butter to fully melt and coat the corn. Add the lime juice and mayo, stirring the corn to combine. Season with additional salt if needed. -
Step 4
In a cup, layer the corn mixture with cotija cheese (if using) and Siete Traditional Botana Sauce. Repeat the steps once more so you have two layers of each. -
Step 5
Serve with a spoon and enjoy as is or serve as a dip alongside Siete Street Corn Maiz Totopos!
