Chicken Fajita, Refried Pinto Beans, and Taco-Seasoned Veggies Plate

Step 1
Add 1 tbsp of oil to a large skillet and heat over medium-high heat. -
Step 2
Cook 1 lb of sliced chicken with the fajita seasoning, stirring often for 3-5 minutes, or until done. -
Step 3
Heat the can of refried pinto beans with water or broth to loosen the beans as needed. -
Step 4
Remove chicken from the skillet, and heat another tbsp of oil over medium-high heat. Add sliced onions, zucchini, and bell peppers. Once charred and almost cooked through, add half the packet of mild taco seasoning to the veggies.
