Step 1
Heat a large nonstick skillet over medium-high heat. Warm all 8 tortillas and hold in a tortilla warmer or in a clean kitchen towel until ready to build the tacos. -
Step 2
In the same skillet, heat the avocado oil. Add the diced onion, jalapeno, and tomato to the skillet and cook until onions are translucent, about 2-3 minutes. -
Step 3
Add the scrambled eggs and stir with a rubber spatula, seasoning with salt and pepper.. Once the eggs are a little over halfway cooked, firm but still slightly runny, add ½ of the jar of Siete Casera Mild Salsa. Stir in the crushed totopos and remove from the heat. -
Step 4
Add diced avocado and season with additional salt and pepper to taste. -
Step 5
Build migas tacos by spooning the scrambled egg mixture into each warmed tortilla, garnishing with more Mild Salsa to taste.
