Step 1
Preheat oven to 350°F. Cut each tortilla in half and heat in a skillet over medium-high heat for 5-10 seconds on each side, until pliable. -
Step 2
Using a muffin or cupcake pan, place each tortilla, while still warm, and fold to cover all sides of each cupcake mold. -
Step 3
Bake for 10 minutes or until golden brown. Let cool. -
Step 4
In a small saucepan, add queso and heat until warm. -
Step 5
Layer each tortilla cup with warm refried beans, warmed queso, guacamole, sour cream or yogurt, salsa, chopped tomatoes, and olives.
